Refreshing Marinated Salad with Cucumber, Onion, and Tomato

Are you in search of a vibrant and flavorful salad to elevate your dining experience? Look no further than this refreshing marinated cucumber, onion, and tomato salad! Brimming with crisp vegetables and coated in a zesty dressing, it presents a delightful fusion of textures and tastes that complements any dish.
Ingredients:

  • 2 large cucumbers, thinly sliced.
  • 1 large red onion, thinly sliced.
  • 3 large tomatoes, diced.
  • 1/4 cup fresh parsley, chopped (optional, for garnish).
  • Salt and pepper to taste.
  • For the Dressing:
  • 1/4 cup olive oil.
  • 2 tbsp red wine vinegar.
  • 1 tbsp lemon juice.
  • 1 tsp honey (optional).
  • 2 cloves garlic, minced.
  • 1 tsp dried oregano.
  • Salt and pepper to taste.

Instructions:

Prepare the Vegetables:

Wash the cucumbers, tomatoes, and red onion thoroughly. Thinly slice the cucumbers and red onion, and dice the tomatoes into bite-sized pieces. Place them in a large mixing bowl.

Make the Dressing:

In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, honey (if using), minced garlic, dried oregano, salt, and pepper until well combined.

Marinate the Vegetables:

Pour the dressing over the sliced cucumbers, onion, and diced tomatoes in the mixing bowl. Toss gently to evenly coat the vegetables with the dressing. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Garnish and Serve:

Just before serving, give the salad a final toss. Adjust the seasoning with salt and pepper if necessary. Sprinkle chopped parsley over the top for a burst of fresh flavor and vibrant color. Serve chilled as a refreshing side dish with your favorite main course.

Recipe Tips:

Enhance freshness by adding other vegetables like bell peppers or thinly sliced radishes.
Customize the dressing to your taste by adjusting the vinegar, lemon juice, or honey for the perfect balance of tanginess and sweetness.
For optimal enjoyment, refrigerate the salad for at least 30 minutes before serving to let the flavors develop.
Savor this marinated cucumber, onion, and tomato salad as a light and healthful addition to your meal. With its crisp vegetables and tangy dressing, it’s destined to become a favorite in your culinary repertoire.
